做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
