做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮开(kāi )后转中火。煮到(dào )水快(kuài )熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
