做法:春笋切(qiē )成(chéng )片(piàn )后加少许盐捞出(chū )后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
