做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁(zhī )时(shí )盖上(shàng )锅盖(gài )焖。
