做(zuò )法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
