做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅盖焖。
