做(zuò )法:春笋切成片(piàn )后加少许盐捞(lāo )出(chū )后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
