做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡(pào ),生(shēng )姜(jiāng )切片,葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
