做法:春笋切成(chéng )片后加(jiā )少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
