做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀稍收汁(zhī )时盖上锅盖焖。
