做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
