做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的(de )时候(hòu )加入(rù )盐,翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上(shàng )锅(guō )盖(gài )焖。
