做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
