做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖(mèn )。
