做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
