做法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
