做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快(kuài )熬干的时(shí )候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
