做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
