做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
