做法:春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
