做法(fǎ ):春(chūn )笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
