做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的(de )时候(hòu )加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
