做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时(shí )盖上锅盖焖。
