做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖(gài )上锅盖焖(mèn )。
