做法:春笋切成片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅(guō )盖焖。
