做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
