做法:春笋切成片(piàn )后加(jiā )少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
