做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖(mèn )。
