做法(fǎ ):春(chūn )笋切成片(piàn )后加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
