做法:春(chūn )笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
