做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
