做法:春笋切成(chéng )片后加(jiā )少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加(jiā )入(rù )盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
