做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡(pào ),生(shēng )姜(jiāng )切片,葱(cōng )切成(chéng )段。锅(guō )烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
