做(zuò )法:春(chūn )笋切成片后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
