做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出(chū )后用(yòng )清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
