做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋(sǔn ),盖上锅盖(gài )大火(huǒ )煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
