做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
