做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出(chū )后(hòu )用清水浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
