做法:春笋切成片后加(jiā )少许盐(yán )捞(lāo )出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
