做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍(shāo )收汁(zhī )时盖上锅盖焖。
