做法:春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
