做法:春笋切成(chéng )片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开(kāi )后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
