做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖(gài )上锅盖(gài )焖。
