做法(fǎ ):春笋切成片(piàn )后加少许盐捞出(chū )后用清(qīng )水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
