做法(fǎ ):春笋切成片后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
