做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均(jun1 )匀稍收(shōu )汁时盖上(shàng )锅盖焖。
