做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
