做法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
