做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的(de )时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
