做法:春(chūn )笋切成(chéng )片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
